PROTEIN-PACKED ENERGY BALLS

 
 

So much better (and cheaper) than store bought energy bars, these balls are the perfect snack to keep in your freezer. Packed with so many nourishing, whole-food ingredients, these are a go-to and long-standing favorite in our house.

 

INGREDIENTS

  • 1/2 cup coconut oil

  • 1/4 cup honey

  • 1 cup creamy peanut butter

  • 1-2 tablespoons vanilla extract

  • 1/2 cup hemp hearts

  • 3-4 tablespoons psyllium husks

  • 6 pitted dates

  • 1 cup unsweetened shredded coconut

  • 1/3 cup dried cranberries

  • 2 cups oats

  • Generous pinch of flaky sea salt

  • 1 chopped dark chocolate bar

Combine all ingredients in a food processor and blend till combined. Form into balls with your hands into a sealed container and toss in the freezer! YUM.
